Unbalanced Libra
I am still using my 'Set It and Forget It' rotisserie and I still love it. However, last night I decided to use my oven! We have been eating a lot of chicken and I've been running out of ideas when it comes to chicken meals that are yummy and easy to make.

I made a simple chicken and mushrooms dish and while I am sure it's been done before, I'm not so sure it has ever been done as easy as I did it. See, I'm lazy when it comes to cooking, in fact, right now I am trying to talk CJ into just ordering pizza tonight - but I digress...

This 'recipe' - if I can even call it that, was:
  • 5 boneless, skinless chicken breasts
  • Ken's honey dijon dressing
  • Fresh sliced mushrooms
Sautee the mushrooms in a pan with a small amount of butter (actually, I used that 'I Can't believe it's Not Butter' stuff) and a bit of salt (I used Laury's Seasoned Salt)

Mix the Ken's honey dijon dressing and a bit of water in a glass dish and add some of the mushrooms. Place the chicken breasts in the dish and then flip them so both sides get the Ken's honey dijon dressing mixture. Add the rest of the mushrooms on top.

Bake uncovered at 375 degrees until chicken is cooked all the way through.

The combination of sauteed mushrooms with the Ken's honey dijon dressing was sooo yummy!
